For those of you who attended Solar's baby shower, here is the spinach dip recipe that I promised:
1 package frozen chopped spinach
1 package cream cheese
1 can rotel
1 8oz package pepper jack cheese
1 4oz or 6oz package of shredded parmasen cheese
Defrost and drain spinach.
Melt cheeses together.
Drain and add can of rotel.
Fold in spinach.
Microwave on high until mixture is creamy.
For more of a kick, use Monterey Jack cheese and add chopped jalapenos and purple onion.
*I usually always double the recipe

Yum, yum, yum. I think it was even better in the afternoon, re-heated on a paper plate. Yum!
